Preparation
Heat the frying oil (or ghee or ayurvedic butter) in the toaster.
Cut the tofu into cubes (0.5 cm long, little chunks) and place in the pan and fry until crispy and smoked.
Chop the garlic cloves and onions into very small pieces and add to the smoked tofu as soon as it is fried.
Add the bay leaves.
Add salt, turmeric powder, chili powder, garam masala and cumin powder and stir well.
Add the black pepper and baking soda.
Beat and add the tomatoes and stir them well.
Add the spinach cream, the spinach leaves and the cream (or butter).
Let these cook on medium flame for 12-15 minutes.
Now stir the corn starch with twice the amount of water in a glass and place on the platter. Stir well till your favourite dish will becomes so deliciously creamy.
Extra:
If you do not have corn starch at home, roux (it is a mixture of flour and fat) is also suitable or you can cook Indian spinach for a longer time until some of the liquid has evaporated and you have reached the desired consistency.
Tip: a little soda (baking powder) makes the Palak Paneer even more round and smooth. This step is definitely recommended, but if you don't have one at home, you can skip it.
Serve the delicious Indian Palak Paneer with Basmati rice or homemade naan or roti (Chapati).
You can also use butter rather than cream. This makes the spinach dish richer in calories, but it tastes even more creamy. Taste the way you like it!
As a drink for the perfect Indian menu, you should definitely prepare mango lassi!
