We present to you one such strange yet very delicious Indian dish you should
try making at home.
Parwal Prawn stir fry is a mix of chopped parwal or
pointed gourd and prawns cooked to perfection. Parwal, also called pointed
gourd, has a very soft texture with a crisp exterior once cooked. It is one of
the healthiest green vegetables used in the Indian cuisine, as it is highly
nutritional and aids digestion. This dish is delicious as parwal and prawns go
hand in hand and are both very healthy and high in nutrition.

Slice and chop parwal, onion, tomatoes and peel the garlic cloves.
In a kadai heat a little oil and add the sliced parwal pieces and stir fry
To the parwal add garlic powder and salt according to your taste
Stir fry for a while and remove the parwal in a bowl
In the same kadai add the finely chopped onions and cook
Along with the onions add whole peeled cloves of garlic, ginger paste and stir fry for a while
According to taste add chopped chillies, and tomatoes
Once the vegetables are semi-cooked add spices like turmeric, cumin powder, coriander powder, chilli powder, and make a coarse paste
To this paste add 2-3 spoons of water to prevent the vegetables from burning
Add the prawns to the already cooking paste and mix.
Cover the kadai or pan and allow the prawns to soak the spices.
Once cooked add the already stir fried parwal pieces and mix
Add garam masala to the dish for aroma and distinctive taste
Garnish with chopped coriander leaves for a fresh flavour
Serve warm with freshly chopped coriander leaves.
