A complete Indian meal comprises of staples like
rice and chapatis, sides like pickles, chutney, papads, etc and two main dishes curry
or lentils and a dry vegetable dish called Sabzi. The dry vegetables dish can
be made using one vegetable cooked in spices and herbs or more
than one vegetable. One of the most delicious and masaledar Indian dry dish is
Baingan ka Bharta.
Baingan
or brinjal is peeled, mashed and cooked with various spices and herbs to make
this very delicious and healthy sabzi. Make this very famously cooked Indian
dish at your home using natural and true to taste groceries and ingredients

Run the eggplant under water and rinse thoroughly
Cut the head of the eggplant from near the stem
Make four cuts on the sides of the eggplant just enough to tear the cover and without going all the way through
Roast the eggplant on medium to low or medium flame
Use a fork to turn the eggplant on the flame for all sides to get roasted equally
Check with a fork or knife if it is completely roasted
The fork or knife should be able to slide in the brinjal flawlessly
In a kadhai, heat the oil
Once heated add chopped onions and garlic
Roast till they turn golden
Next add chopped tomatoes and green chillies
Saute well and let the vegetables cook in the masalas
Next add chilli powder and mix
On the side chop and thoroughly mash the eggplant
Add this mashed eggplant to the pan
Cook on medium flame, add salt according to taste
Serve hot garnished with chopped cilantro and chapatis.
