Indians believe greatly in spicy tangy meals. There are a variety of subtle flavoured dishes along with plenty of dessert options in the Indian cuisine but there are definitely a larger number of savoury and tangy dishes which are made using a variety of spices. These dishes are served by vendors on stalls on the streets to 5 star international hotels. Here is a quick and easy recipe of one such delicious meal, Chana Masala and Puri.

Ingredients
ghee

2-3 green cardamom

1 ¼ tsp cumin seeds

5 onions sliced

2 tsp degi red chilli powder

¼ tsp hing

½ tsp turmeric powder

¼ cup coriander leaves
3 tomatoes

1 inch ginger

4 garlic cloves
-
4 cups black chana
½ tsp sugar

1 tsp black pepper powder
-
1 cup SV maida
-
1 tsp rawa
Salt to taste
Water
Oil for frying

Directions
Take a pot large enough to make gravy
To the same add Ghee and let it boil, once hot add green cardamom, black pepper, and cumin seeds
Allow them to cook and sputter
Next add onions to the same pan and cook till they are light pink in colour
Bring out your spices and add salt according to taste along with coriander powder, hing, red chilli powder and turmeric
Let the spices and other ingredients cook
To the same pan add a few chopped coriander leaves and allow it to cook for 2-3 minutes
At last add the tomatoes and mix
Cook this till the tomatoes are cooked and squishy, you will see the ghee is also separating from the other ingredients
Once the process is through let this masala come to room temperature
Once the ghee is separated and the masala has cooled down, transfer all the spices and ingredients to a mixer grinder and make a smooth paste
Keep this prepared masala aside
For the gravy, in a large pot heat ghee
To boiled ghee add chopped green chillies, garlic, and ginger
Saute these nicely for a while
To the same add chana and cook
Later add the required amount of sugar and salt to taste
Cook the ingredients while sauteing, once mixed cover with a lid for a few minutes
Later to the same pot add red chilli powder, pinch of hing, and black pepper powder
Mix and cook the chana on a medium flame
Once mixed and the masala you had prepared earlier and cook the same
Add water to the ingredients and cover with a lid after mixing well
Let the chana cook on medium flame
Once the chana is thoroughly cooked switch off the gas and garnish with chopped fresh coriander
Next step puri:
In a large dough plate or bowl add maida, sooji, ghee, salt to taste and knead with water
Once the dough is made over with a damp cloth for 30 minutes
Make small balls of the dough and round them out on a chakla using a belan
In a kadhai heat frying oil
Once heated slowly add the round puris to the oil and let them rise
Remove puri from the kadai onto a sheet to remove excess oil
Serve hot chana masala and puri with salad and chutney of your choice and mesmerise your guests with this incredible yummy meal.
