Okra
or Bhindi is one of the most popular summer vegetables in India. People love
okra and it is very easy to cook it as well. Okra can be cooked in various
ways, using different techniques and spices. One of the easiest, quickest and
most delicious Okra recipes is Okra masala or masala bhindi. It is a dry
vegetable dish consumed with Indian breads like roti.

Ingredients

250 grams Okra
3 tablespoon oil

½ teaspoon cumin seeds

2 medium onions chopped

¾ tablespoon ginger garlic paste
2 medium tomatoes
½ teaspoon salt
-
¼ teaspoon turmeric powder
-
1 teaspoon red chilli powder
-
1 teaspoon garam masala
-
¾ teaspoon coriander powder
-
½ teaspoon kasuri methi
-
2 teaspoon cilantro or coriander leaves
Directions
Thoroughly clean the okra under water and dry them completely using a kitchen towel or tissues
Chop off either ends of the okra and discard them
Chop the remaining okra in ¾ pieces
In a pan heat the oil
Add the chopped okra pieces to the pan and saute
Cook until the pieces are half cooked
Keep them aside on a plate
Add more oil to the same pan and add cumin seeds
As soon as cumin seeds start sputtering in the oil add the chopped onions, and green chillies to the same pan
Cook them until the onions are golden
Next add the ginger garlic paste and cook until the aroma wears off
To the same add salt and tomatoes and cook until the tomatoes are soft
Next add your masalas, red chilli powder, turmeric powder, garam masala, and coriander powder
Add water to the pan and cook the spices
Once you have a thick mixture, taste the masala and add spices as per requirement
Next add kasuri methi and okra pieces to the spices
Stir and mix the okra pieces with the masala thoroughly
Cook until bhindi is completely ready and garnish with freshly chopped coriander
Serve this dish hot with soft rotis or rice.
