Ragi or finger millet is one of the healthiest
grain grown in India. States like Rajasthan, Karnataka, Andhra Pradesh, Tamil
Nadu, Orissa, Maharashtra, Kumaon region of Uttarakhand and Goa; of which,
Maharashtra, Tamil Nadu and Uttarakhand grow finger millet or Ragi majorly.
Ragi is a gluten free millet which is rich in protein and carbohydrates. It
also has the highest amount of calcium and potassium.
Ragi is the healthiest alternative to wheat and
rice flour and can be used to make various dishes like ragi porridge, ragi
idli, ragi chilla, ragi dosa, ragi ki roti, etc. For the health conscious
adults ragi is the perfect grain to consume for a low calorie and high
nutrition diet.
In
this recipe we'll learn how to make the South Indian delicacy, Dosa using Ragi
flour:

Ingredients

1 cup or 150 grams of ragi flour

¼ cup besan or gram flour
-
½ cup chopped onions
-
½ teaspoon chopped ginger
-
½ teaspoon chopped green chillies
-
3 tablespoon chopped coriander leaves
½ teaspoon cumin seeds
3 tablespoon grated coconut
½ cup buttermilk
Water
Salt
-
Ghee or oil
Directions
In a mixing bowl add ragi flour and besan or gram flour
Next add onions, ginger, curry leaves, green chillies, coriander leaves, asafoetida, cumin seeds, grated coconut and salt
Add buttermilk and water to the dry mixture in small consistencies
Mix thoroughly to form a thin, smooth batter
Cover the batter and let it sit for 10-15 minutes
Take a non-stick pan
Coat the pan with a thin layer of oil and heat on medium flame
Using a ladle pour the thin batter on the pan
Once the sides become golden flip it
Repeat for the rest of the batter
Serve the Ragi Dosa with a side of traditional South Indian sambar and coconut chutney.
