Gujarati snacks and delicacies are to die for. They
are made using naturally obtained ingredients and are very delicious. One of
the best Gujarati dishes is Dhokla. It is a super light, fluffy and delicious
Gujarati snackable that can be enjoyed at any time of the day. Usually made
using besan or gram flour,
Dhokla can be made healthier by replacing the gram flour with rawa or sooji.
This yellow coloured sweet and salty delicacy is famous all around the
globe.

Ingredients

Rava 1 cup
-
½ inch ginger
-
Water
Oil
½ teaspoon sugar
-
1 pinch turmeric powder
1 tablespoon lemon juice

1 teaspoon eno
Salt
-
½ teaspoon mustard seeds
-
½ teaspoon cumin seeds
-
1 teaspoon sesame seeds
-
8-10 curry leaves
-
1 pinch of hing
-
2 tablespoon chopped coriander leaves
-
tablespoon grated coconut
Directions
Make a thick paste of the ginger and green chillies
In a bowl mix rawa, ginger and chilli paste, water, oil, sugar, turmeric powder, lemon juice and salt
Mix the ingredients to make a batter with medium thickness
Keep aside for 15 minutes or so
For this recipe you will need two utensils, a trivet and a steamer pan
Add the trivet to the pan and add water over it and allow the water to come to a boil
Take another pan and this pan should be greased with oil for smooth transfers
Take the batter you had earlier kept aside and add eno or fruit salt to it.
Brisk the batter thoroughly and quickly pour the entire thing into the greased pan
To spread the batter or even it out shake the pan
Place the pan in the steamer pan on top of the trivet you had placed earlier
Cover with a lid and let it steam
The process should take nearly 20 minutes
To check if the dhokla is ready use a toothpick to poke it. A clean toothpick means that your dhokla is ready
Let the dhoklas cool after removal from the pan
In a small pan heal some oil
To this oil add mustard seeds first and allow them to crackle
Next add cumin seeds and let them crackle
Next add hing, sesame seeds and curry leaves
After a few seconds turn off the heat and add water to the pan
For the final step pour the tampering you just prepared evenly over the dhokla and garnish with fresh grated coconut and chopped coriander leaves
Serve fresh with chutney of your choice and mesmerise your guests with this incredible yummy snack.
